Vegan Cream Eggs


How good is the gooey centre of a cream egg? With such limited options for vegans and the fact that the iconic Cadbury cream egg is one of my kids favourites, I thought I would have a crack at recreating one fully vegan. This recipe is quite easy but does require some patience waiting for elements to set, the end result though is worth it. I personally think its better to get some egg moulds and do the chocolate first keeping some spare chocolate to seal the sides one the yolk part has set.

Ingredients

For The Chocolate:

  • 50-75g cacao butter

  • 3 tbsp agave or maple syrup

  • 6 tbsp cacao powder

  • ALT- 250g vegan chocolate such as @loving_earth

For the egg:

  • 1/2 can coconut cream, chilled in the fridge overnight

  • 1 tbsp refined coconut oil, melted

  • 1 cup natural powdered sugar

  • 1 tsp vanilla bean extract

For the yolk:

  • 4 tbsp smooth cashew or almond butter

  • 1 tbsp coconut oil, melted

  • 2 tbsp rice malt syrup

  • 1/2 vanilla bean extract

  • 1/2 cup natural powdered sugar

  • 1 tsp turmeric

Method

with egg moulds ready, make the chocolate coating by melting the coconut oil and cacao butter either in a thermomix on 70 degrees or in a pot over simmering water being that the pot doesn't touch the water. Stir in syrup then whisk in cacao powder until smooth. Coat egg mould and place in freezer.

Scrape the top of the coconut cream from tin leaving the milk and place in bowl. Pour in some melted coconut oil, the syrup, natural sugar and vanilla and whip until smooth.

Mix the ingredients of the yolk until it creates a dough like texture. Spoon 1/2-1 teaspoon (depending on mould size) into the egg moulds trying to keep a round shape in centre and then place in freezer.until it firms up a little then pour in the white coconut cream egg mixture to fill the mould and place back in freezer until sets.

seal the edges with leftover melted chocolate and place back in freezer.

Take cream eggs out of freezer 5-10min before eating so you have your creamy egg centre and enjoy!!!
