Passionfruit, Coconut & Lime Bliss Balls
There's nothing like the zing of fresh lime and the sweetness of a ripe passionfruit, add a bliss ball staple and you've got yourself a winning combo to keep a sweet tooth happy! These delicious treats are vegan, sugar, fructose and gluten free. Keep a stash in the freezer!!!!!
Ingredients
1 cup almond meal 1/2 cup cashews (soaked 6hrs & rinsed)
1/4 cup sunflower seeds 1 1/2 cups desiccated coconut Zest of 1 lime, juice of 3 1 tsp vanilla extract Pulp of 2 passionfruit 1/3 cup agave syrup or rice malt syrup Pinch of Himalayan pink salt *1/4 cup of cocao butter *1/2 cup vegan vanilla protein optional
Method
Place everything into a food processor (I use a thermomix) and blitz until the mixuture starts to get sticky. with slighty damp hands roll into small balls, then roll in some extra coconut and place into cupcake moulds and put in fridge to set. You can then place into freezer balls and store in freezer. xB
